Puffed food machinery consists of several parts: the feeding system, extrusion system, heating system, transmission system, rotary cutting system, and control system. The material is fed by the feeder, and inside the barrel, it undergoes high temperature, high pressure, and high shear, causing the material to expand and achieve the required microstructure and other quality requirements.

Material extrusion puffing is a technology that expands food through external forces such as moisture, thermal energy, mechanical shear, and pressure, undergoing an instantaneous high-temperature, high-pressure process. When raw materials containing a certain amount of moisture enter the barrel of the puffing equipment through the feeder, as the twin screws rotate, the material is continuously conveyed forward. When the material gradually encounters resistance from the mold of the puffing equipment, it is compressed. The heat generated by the heating coils outside the machine barrel and the intense stirring and friction between the screw and the sleeve produce thermal energy. Due to the rolling effect and the heat, mixing, and shear applied externally, high temperature and high pressure are generated, causing the material to be in a molten state within the extrusion cavity, while the moisture in the material remains in a liquid state. When the molten material enters the high-temperature and high-pressure zone in front of the die head, it is in a completely fluid state. As it passes through the extrusion die holes, it reaches normal temperature and pressure conditions. The sol-starch in the material also expands instantaneously in volume, causing many micropores in the food to burst and the volume to expand rapidly, thereby forming a loosely textured puffed food.
